RECIPES
Potato Soup
2 TBS flour
1 TBS grease
3 C milk
1 C chopped carrots
1 TBS salt
2 tsp black pepper
4 C potatoes, I used left over baked potatoes
1/2 lb bacon
8 oz shredded cheese
1 C sour cream
Cook flour and grease in pot for 2 mins, stirring well to prevent scorching. Whisk in milk, removing all clumps. Allow to simmer 15 mins to thicken.
Add carrots, potatoes, and seasonings. Mash potatoes to thicken soup broth. Allow to simmer for 30 mins.
Add bacon, cheese and sour cream. Stir to combine well. Simmer until cheese is melted.
Chicken & Dumplins
Dumplins
1 C flour
1 tsp baking powder
1/2 tsp salt
1/4 C coconut oil
1/2 C milk
Use pastry blender to combine dry ingredients with coconut oil until crumbly. Add milk. Stir well. Turn out into floured surface and knead until well combined. Roll out with rolling pin until very thin. Cut into 1 x 3 inch pieces.
Dredge each dumpling in flour.
In a large pot, add:
2 C chicken broth
1/2 C flour
1 tsp salt
Whisk to combine and cook for 5 minutes, until thickened.
Add:
4-5 C chicken broth
2 tsp black pepper
1 tsp salt (optional)
Whisk and heat to rolling boil.
Place in each dumpling one at a time to boiling chicken broth mixture.
Stir and allow to cook 5-10 minutes.
Add 1-2 C cooked and shredded chicken to pot. Stir and cook for 10 more minutes.
Serve with cornbread or sourdough.
Roast Beef Sandwiches & Homemade Fries
Sandwiches
6-8 oz roast beef sandwich meat
6 slices provolone cheese
6 small sub rolls or onion rolls
Cut rolls in half. Add 2 slices roast beef and one slice cheese to each roll. Bake in 425 F for 10 mins, or until cheese is melted.
May serve with mayonnaise if desired.
Homemade Fries
2-3 lb potatoes, washed and sliced
1/2 C olive oil
1 TBS salt
1 tsp paprika
Coat all fries with oil and seasonings. Place on cookie sheet and bake at 425 F for 25-30 mins, until crispy.
Easy Breakfast Casserole
3 C diced bread (French or sourdough)
2 C shredded cheese
10 eggs
4 C milk
1/2 tsp black pepper
1/2 tsp dry mustard
1 tsp salt
1/2-1 lb sausage, browned
Butter the bottom of a 9×13 baking dish. Add the cubed, bread.
Sprinkle cheese on top of bread pieces.
Whisk together eggs, milk and seasonings. Pour on top of bread cubes. Sprinkle sausage on top. Bake at 350 F for 45-60 mins, until eggs are set.
Chicken Pot Pie
2 10 oz pkgs mixed vegetables, or canned equivalent
1 batch cream of chicken soup (see video for directions) or 1 store bought can of cream of chicken
2 C shredded chicken
1 tsp salt
1 tsp black pepper
1 pie crust
Combine all ingredients, save pie crust. Place in baking dish.
Top with pie crust (recipe to follow). Cut a few vent holes in crust.
Bake at 350 for 45-60 mins.
Pie crust
1 1/4 C flour
1/2 tsp salt
1 stick butter, cubed
1/4 C ice cold water
Blend flour, salt and butter until fine and crumbly. Add water and combine well until no longer sticky.
Roll out on floured surface until thin.
