Ingredients
* 2 teaspoons olive oil
* 1/2 medium onion, finely chopped
* 3 cloves garlic chopped
* 2 cups of water/vegetable broth
* 1 (6-ounce) bag baby spinach, divided
* Freshly ground black pepper, to taste
* Kosher salt, to taste

Preparation:

* In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring constantly, until it turns slightly brown (but not burnt).
* Add 1 bag of baby spinach sauté for 2 minutes .
* Add 1/2 tablespoon of salt
* Stir in the spinach, cover, and simmer for 2 more minutes.
* Cool slightly, then transfer to a blender.
* Add water or vegetable/chicken broth
* And blend it until smooth.
* Add puréed spinach with 1 cup of broth to same skillet.
* Seasoning with pepper and bring it boil.
* Add cornstarch mixture for thickening if needed.
* Add spinach soup into a serving bowl.
* Garnish with 2 to 3 tablespoons of cream.
* Serve the spinach soup hot or warm with croutons or cheese toast.
