Delicious and Healthy Shrimp Bites: Perfect for Holiday Parties or Quick Snacks at Home!

Ingredients:
– 1lb large shrimp, peeled and deveined
– 2 garlic cloves, finely minced
– 1 Tbsp cilantro, finely chopped, plus extra for garnish
– 1 tsp paprika
– 1/2 tsp cayenne pepper
– 1/2 tsp sea salt
– 2 Tbsp olive oil

Avocado Spread:
– 1 avocado
– 1/4 tsp salt
– 1 Tbsp lime juice, plus extra for squeezing
– 1 large Persian cucumber, sliced into 22 rings

Instructions:
1. In a large mixing bowl, pat dry the shrimp with paper towels. Add minced garlic, 1 Tbsp cilantro, paprika, cayenne pepper, sea salt, and 1 Tbsp olive oil. Stir well to combine.
2. Heat 1 Tbsp olive oil in a large pan over medium/high heat. Add shrimp in a single layer and sauté for 2 minutes per side, until cooked through.
3. In a small bowl, mash together the avocado, salt, and lime juice until creamy.
4. Divide the avocado mixture over 20-22 cucumber slices.
5. Top each cucumber slice with a cooked shrimp.
6. Garnish with fresh cilantro and a squeeze of lime.
7. Enjoy your delicious and healthy shrimp bites!
