Day 4 of 64 are chicken wraps like you’ve never tried before. Really flavorful chicken wrapped in a spinach tortilla with homemade chili mayonnaise, shredded lettuce and carrots. Dinner today was a take away of some crab sushi, paneer tikka masala and naan.
For the chicken: Slice 2 chicken breasts into smaller pieces and then mix with 2 tbsp yoghurt, 1 tbsp minced garlic, 1 tsp paprika, ½ tsp cinnamon powder, 1 tsp cumin powder and 1 tsp chili powder. Add 2 tbsp olive oil and mix. Pass a skewer through a sweet potato standing upright and then skewer the chicken onto of each other. Bake at 200C for 40 to 45 minutes.
For the wraps: Mix 2 cups whole wheat flour, 1 tsp salt and 1 tbsp olive oil. Add ½ cup spinach puree and ½ cup water and mix to form a dough. Knead for 5 minutes and then make small portions and roll each portion out into a thin tortilla. Cook on a dry pan for 1-2 minutes.
For the mayonnaise: Add 1 egg, 1 cup oil, 1 tsp mustard, 2 tbsp lemon juice and 1 tsp salt in a bowl and blend using an immersion blender. Once it has emulsified, mix 2 tbsp chili sauce to make a chili mayonnaise or skip this step if you don’t like it spicy.
To assemble: Spread the mayonnaise on the tortilla wrap, spread the lettuce and carrots over it, add the sliced chicken, roll and enjoy.
Day four 64 is delicious chicken wraps first you want to prepare the chicken and simply chicken breast slice up mixed with yogurt mixed garlic and spices skew onto a piece of sweet potato and then bake for 40 minutes at 200 Cel for the wraps mix together whole whe flour salt
Olive oil spinach p in water roll it up nice and thin into a big tortilla and then you just want to cook on a dry Pan Once the chicken’s done slice it up and then quickly make some mayonnaise it’s olive oil and egg mustard salt and lemon
