Broccoli salad with tahini dressing

Continuing our healthy eating in January, here’s another recipe for you. This delicious and flavorful salad makes a great side dish for steak or any protein. It can also be served by itself as a full dish for lunch.

For the dressing:
– 6-8 tsp tahini
– 4 tsp olive oil
– 2 tsp maple or agave syrup
– 1/4 cup water
– Juice of 1 lemon
– 1/4 cup grated Parmesan
– Salt and pepper
– 1 small red onion, minced

Whisk all the ingredients together. The dressing stays fresh for up to 1 week in the fridge.

For the salad, combine the desired amount of:
– Chopped broccoli
– Sliced bell pepper
– Cooked bulgur or quinoa
– Sliced cucumber
– Chopped kale

Add the dressing on top and mix well.
