Lazy Low-Carb Butternut Squash Lasagna | It’s Skinny Pasta

This tasty butternut squash and spinach “lasagna” pasta recipe is packed with hearty flavors, healthy vegetables, tons of cheese, and It’s Skinny Fettuccine pasta. Our ZERO net carb, low-calorie pasta alternative is the perfect option for deconstructed lasagna. You get all the flavors of traditional pasta with none of the post-meal guilt. In this lazy veggie lasagna recipe, there’s plenty of filling, hearty vegetables, rich sauce, cheese, and flavor. It’s a must-try!

Ingredients:
1 package It’s Skinny fettuccine
1/2 butternut squash, peeled and sliced (the bottom half of a full squash)
1/2 onion, sliced thin
2-3 cups fresh spinach
1 cup crushed tomatoes
1/2 cup Mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 cup ricotta cheese
1 bunch fresh basil, chopped
2 tbsp olive oil
Salt & pepper to taste
