Broccoli Cheese Soup

24 oz broccoli florets
1 onion, chopped
32 oz chicken broth
1 1/2 C milk
1/2 tsp salt
1/2 tsp pepper
1-2 C shredded cheese
Bacon crumbles & sour cream for topping

Cook broccoli until tender.
In large pot, saute onions in olive oil until translucent.
Add broccoli, broth, milk, salt and pepper. Bring to boil.
Cover, reduce temp, and simmer 10-20 minutes.
Stir in cheese.
Top with bacon and sour cream.

Cheeseburger Chowder

1 lb ground beef
1 onion, chopped
5 potatoes, chopped
3 carrots, chopped
4 C broth
1 can crushed tomatoes
1/4 C ketchup
1/4 C mustard
2 C cheese, shredded
1 C milk
salt & pepper to taste

Brown ground beef & onions in skillet.
Transfer to crock pot. Add potatoes, carrots, broth, tomatoes,
ketchup and mustard to crock pot.
Cook, on low for 6 hours, high for 3.
30 minutes before serving, add cheese and milk.
Season with salt and pepper to taste.

Creamy Tomato Soup

1 can crushed tomatoes
1 onion, diced
2 cloves garlic, minced
2 C chicken or vegetable broth
1 C heavy cream
2 TBS olive oil
1 tsp sugar
1 TBS italian seasoning or basil
salt and pepper to taste

In stock pot, saute onions and garlic in olive oil.
Add tomatoes, broth, sugar, and seasonings.
Simmer 20 minutes.
Stir in heavy cream and allow to heat through.
Serve with cheese toast or grilled cheese.

Enchilada Chicken Stew

1-2 lb shredded chicken
1 onion, chopped
2 bell peppers, chopped
1/3 C green chili sauce
1 can crushed tomatoes
4 oz tomato paste
1 TBS cumin
1 TBS chili powder
2 TBS italian seasoning
1 tsp garlic powder
salt and pepper to taste

Saute vegetables.
Place all ingredients in crock pot.
Cook on high 4 hours, low for 8 hours.

The Bone so I thought this week would be a perfect time to share some really delicious familyfriendly and budget friendly soup ideas to help us keep our bodies nice and warm and our families good and nourished I have four different recipes this week they all can be made

In the crock pot or on the stove top they are all very inexpensive and I’m going to give you all the recipes so that you know exactly what to have on hand so you can make all of these delicious soups for your family be thinking about your family’s favorite

Winter soup recipe I would love to hear about that in the comments below let’s get started making these delicious familyfriendly and Frugal soups For our first familyfriendly soup recipe we are going to be making some broccoli cheese soup we’re actually going to a gathering tonight and I wish I could have made this in the crock pot but I didn’t start in time to put it in the crock pot so we’re just going to cook it

On the stove but if you’re a better time manager you can do this in the crock pot and just let it cook for the entire day on low but like I said we are going to make this on the stove top okay two things it’s really loud here today

Everybody is home there’s some remodeling going on upstairs and some serious cleaning so I’m not going to interrupt that no mother ever wants to stop their kids from cleaning up and so hopefully we can just Overlook all of that noise the bacon is cooking that’s being noisy the dishwasher is going

That’s being noisy there’s a lot of noise today so welcome to my home but we’re going to get started making this broccoli cheese soup hopefully the camera won’t fall into the soup that’s what happened the last time I was using this camera and making a pot of soup on

The stove hopefully we have resolved those issues so let’s get started making our soup the first thing I’m going to do is add about 2 tablespoons of olive oil my pot is on May High I used my Nutra Chopper to chop up all of my onions if you haven’t gotten one of

Those I’ll link that down below it’s well worth the money so I’m going to sauté these onions I’ll cook them for about 3 minutes or so okay the onions are sauteed now I’m going to add two bags of frozen broccoli I did steam those in the

Microwave for 5 minutes just to sort of get the cooking started a little bit bit quicker I’m also going to add four cups of chicken Broth 1 teaspoon of salt a half a teaspoon of pepper and 1 and 1/2 cups of milk I’ll give that a good stir I’m going to allow this to come to a boil and then I’ll turn it down and simmer it for about 10 minutes or so the soup has

Been simmering for probably 15 minutes or so I think the broccoli is tender and ready to go I’m going to just chop it up a little bit so that there’s not such big pieces but I started with the broccoli fettes so there’s not any big thick stem pieces in here if there

Weren’t any stems they were already chopped up you can also use an immersion blender if your people just really will bulk at these big p pieces of broccoli whatever you need to do at this step but I’m just going to chop them in smaller pieces last step is I’m going to add two

Cups of freshly shredded cheddar Cheese you can go as heavy or light on the cheese as you would like we really like cheese so going to make sure and have plenty in there and then and I’m just going to stir this until it’s melted and I’m going to move it to the crock pot to keep warm it’s

Going to be a super easy soup ready in just about 20 minutes as I’m looking at this soup I’m seeing how thin it is and I don’t really like thin broccoli and cheese soup so I’m going to add a slurry to the soup to try to

Thicken it up my friend has just been told that she needs to eat gluten-free so I’m going to use a corn starch slurry but you can also use flour but I just used one tablespoon corn starch and 2 tablespoon of water you can also do the same with flour that should thicken the

Soup up pretty good that way it won’t be quite so Thin okay our next meal for this week is going to be a cheeseburger chowder I’ve never made cheeseburger chowder before I found this recipe actually on chat GPT I’m hoping that it’ll be a delicious addition to my recipe cookbook but I’m going to cook this in the crock pot

Today we have some more home renovations going on today just going to be sort of a busy afternoon not much time to do any cooking so I’m going to go ahead and prep this earlier in the today and stick it in the crock pot and let the crock

Pot do the work okay I’ve got all of my ingredients prepped I have browned my one pound of ground beef and one large onion in my iron skillet I going to add that to the slow cooker okay now I’m going to add 1 qu or 4 cups

Of broth technically you should use uh beef broth I don’t have beef broth I just have chicken broth this is actually the bone broth that I made last week in um that I made in last week’s video so it’s going to do just fine it might just

Alter the flavor just a little bit I’m going to put that in I’ve chopped up four large maybe it was five large potatoes put those in three large carrots I’m going to add those I’m going to add one large can of diced tomato actually this is crushed

Tomatoes either one will be fine 1/4 cup of mustard and 1/4 cup ketchup I’m going to add a couple of teaspoons of salt and a little bit of black pepper I’m going to give all of this a good stir so that all the flavors will cook together nicely okay I’m going to

Put the lid on this and put it on high for about four or 5 hours while we’re doing our project upstairs and then in the last 30 minutes of cooking I’m going to come back and add my dairy product so I’m going to add some milk and some

Cheese I’m not going to add that nail because those products really do better if you add them toward the end of the recipe so I’m just going to put this on high and put on the lid and it’ll be done in no time okay the soup has been cooking for

Several hours and we are almost ready to eat so I’m going to mix in the last few ingredients honestly right now this looks like a glorified vegetable soup so let’s see how this turns out I’m going to add one cup of milk two cups of shredded

Cheese and I have some bacon that I had fried up earlier I’m going to add almost one cup of bacon and stir all of that together as I’m looking at it I think I’m going to add one more cup of milk I did add more tomato than the recipe called for so I

Think I’m going to add one more cup of milk just to balance that out a bit okay I’m just going to let this continue to cook on the high setting I’m going to leave the lid off that way a little bit of the soup can evaporate

And thicken just a bit then it will be time to Eat okay it’s time to make our next soup which is going to be homemade creamy tomato soup this is really simple and I’m excited to share this easy and delicious recipe with y’all okay the first thing I’m going to do is use my large Soup pot I’m going to turn the

Burner on to about medium or medium high I’m going to add about 2 tablespoon of olive oil and I’m going to sauté one onion that I have diced while this is sautéing I’m going to uh chop up some fresh garlic now that the onions have sauteed for quite a while probably about

4 minutes I’m going to add a little bit of fresh garlic about two cloves worth I’m going to allow that to sauté for another 3 minutes or so and then we’ll get on to adding the rest of the ingredients okay those are looking really good and smelling really good so

Now I’m going to add one large can of crushed Tomatoes two cups of broth you can use vegetable broth or chicken broth I’m going to pour this into my tomato can so that I can get all of that extra tomato that wanted to stick in the bottom if we paid for it we might as well not throw it in the

Garbage I’m going to add add 1 teaspoon of salt 1 teaspoon of sugar half a teaspoon of pepper and one teaspoon of Italian seasoning going to stir all of this together try to get all of those seasonings Incorporated really well then I’m going to allow this to rise to a

Boil then we’ll add a couple more ingredients okay our soup has been simmering for probably 20 minutes I’m going to add the last two ingredients I’ve got 1 cup of cream I’m going to pour that In give that a good stir hopefully this is going to combine well sometimes when you add cream to such an acidic soup you can get a little bit of strange things have happening chemically so hopefully this will work out I’m going to add 1 cup of regular milk and that looks absolutely delicious

This was really such a simple and easy recipe almost as easy as opening a can of Campbell’s tomato soup so I hope that you give this a try I’m going to serve it with a couple pieces of cheese toast that I have cooked in the oven and I

Think this is going to be a delicious is dinner okay our very last recipe this week is going to be a yummy chicken enchilada stew I am really excited about trying this in the crock pot I’m going to chop up some of these vegetables and then we’ll get started throwing the soup

Together while I was chopping up the vegetables I decided they might taste a lot better if I went ahead and cooked them a little bit before I put them in the crock pot so I’m going to go ahead and sauté my two bell peppers and one onion going to go ahead

And cook these for just a little bit to soften them up I’m really thankful for my beautiful window in my kitchen but like I’ve said several times it really messes with my recipe videos I’m sorry that the shadows and sunlight is just pouring in and messing everything

Visually up that it could but but I’m not going to complain about the beautiful sunshine it is so good to have Sunshine after these last couple of dreary days so maybe y’all can just Overlook it and I can stop obsessing over explaining about it anyway let’s get started putting our stuff into our

Crock pot and then we’re going to move our vegetables that are cooking sautéing now into the crock pot with the rest of the ingredients I’m going to move it right here maybe that will be a little easier to see in the bottom of my crock

Pot I’m going to add 1 6 oz can of tomato paste one large can of crushed tomatoes I’m going to blend that together to try to incorporate the paste in with the tomatoes and now I’m going to go ahead and add my seasonings I’m going to add 1

Tpoon of cumin one tablespoon of chili powder one tablespoon of Italian seasoning one teaspoon of garlic powder a couple of teaspoons of salt and I’m going to mix all of that together this is a new ingredient that I picked up on the clearance aisle at Walmart it’s

Green chilies it’s like pretty hot I’m afraid I’m scared of hot so I’m going to add 1/3 cup top of this and hope it doesn’t burn me up okay now I can go ahead and add my shredded chicken this is just a chicken that I had deboned a rotisserie

Chicken I think I’m going to do a video about ways that we can use our tisserie chicken in different recipes to make really quick and easy suppers and still have nourishing ingredients that’s really important but it’s really hard to do sometimes to get good ingredients in when you don’t have a lot

Of time okay now it’s time for me to add my vegetables give this one last really good stir this is really thick I’m not going to do anything right now if it stays this thick I may add a little bit of broth to it toward the end but right now

I’m just going to put the lid on this cook it on high for about 4 hours see how it’s looking if it’s going to be a soupy or at least a stew like consistency if it needs a little more liquid we can add it then our soup has

Been cooking for quite a while and it is definitely done it started to sort of burn on the sides I don’t think I’m going to add any more liquid I had thought about it but I think I’ll just leave leave it as it is and have it just sort of a thicker

Stew I have some tortilla chips I think I’m going to put that in the bottom of the bowl and just put the soup on top if you want to top it with some cheese you can I have some sour cream going to put that on top and I have some fresh cilantro which
