Mind blowing low fat, high protein carrot cake !!!
It’s high fiber, naturally sweetened and seriously the perfect texture! If you’re a carrot cake fan, you’re definitely going to want to make this!

INGREDIENTS

1 egg room temperature
1 cup banana mashed, about 2-3 bananas
1 cup carrots shredded
1/2 cup Greek yogurt
1/8 cup maple syrup
1/2 tsp vanilla extract
3/4 cup whole wheat flour
1/2 cup Rolled Oats
3/4 cup vanilla protein powder
1 tsp pumpkin spice or cinnamon
1 tsp baking soda
2 pinches of @osmosalt vanilla salt (code 2EXPLOREWELLNESS to save)
1/4 cup raisins
1/4 cup roughly chopped walnuts
*optional: 1/8 cup monk fruit sweetener or more maple syrup if you like it sweet

INSTRUCTIONS

🥕Preheat the oven to 350 F.
🥕Prepare a loaf pan with parchment paper. (Check my stories and highlights for tips on this!)
🥕In a bowl add the mashed bananas, egg and vanilla extract, maple syrup, Greek yogurt and mix well.
🥕Add your carrots and dry ingredients and mix well before folding in the raisins and walnuts.
🥕Pour the batter into the loaf pan and smooth with a spatula.
🥕Bake at 350 F for 35-45 minutes or until a toothpick can be inserted into the center comes out clean.
🥕Let cool a bit before moving to a baking rack.
🥕After the bread cools Frost the bread with the cream cheese frosting and top with walnuts, shredded carrots and/or raisins as desired.
