MEAL PREP SALAD (No Lettuce!!) 👇🏼

If you didn’t make it to the grocery store this weekend and your veggie drawer is looking pretty sad, or you just need an EASY lunch recipe you can prep once and eat all week — let me introduce you to my NEW FAVORITE SALAD (and there’s NO LETTUCE 🤯)

I got this recipe from @fitfoodiefinds and have been making it ON REPEAT ever since! It’s just so easy to throw together, and perfect for meal prep! I’ll link the full recipe in my stories!

BONUS: this recipe is a great way to get your daily serving of pulses in to add protein and fiber (we LOVE chickpeas around here!) @northernpulsegrowers #ad

👇🏼Here’s what you need:
✔️Chickpeas
✔️Sturdy Veggies (I used a mix of cherry tomatoes, celery, and cucumbers! This is a great “clean-out-the-fridge” recipe — use what you have!)
✔️Cottage Cheese
✔️Seasoning of Choice (I used salt and pepper, everything bagel seasoning, lemon and olive oil)

👉🏼TO MAKE: Chop veggies. Mix with seasoning and beans. Store in the fridge until you’re ready to eat — then top with cottage cheese and enjoy!!
