Hello friends! Welcome to our channel! In this video we will prepare a warm and comforting soup recipe: creamy zucchini soup. This is simple and easy to make, let’s prepare it together! First of all let’s prep the vegetables. Chop 1 medium zucchini. Cut in slices 1 big onion. Crush and slice 5 garlic cloves.

In a heated pot add 2 tbsp olive oil. Add the onion and saute for 2-3 minutes until softened. Next add the garlic and saute for another minute. Add 1/2 cup cashews. It will give the soup a creamy consistency, once we blend it.

Add the rest of the vegetables: chopped zucchini, 3-4 cups vegetable broth. Start by adding 3 cups, then adjust depending on how you prefer the consistency of the soup. Season with 1/2 tsp ground black pepper and 1 tsp salt. Cover and cook on medium-high heat for 15-20 minutes.

Once zucchini is cooked add 150 g fresh spinach. Turn off the heat. Add the juice from half a lemon. Blend until smooth and creamy. Depending on how you prefer your soup add more liquid and season with extra salt and ground black pepper if needed. Serve fresh with a drizzle of olive oil.
