This easy banana bread recipe at home has been modified from baking just a loaf into tasty little banana bread bites! These work wonderfully in lunch boxes as well as for parties or at a buffet. This makes about 48 mini muffins (or one loaf… but where’s the fun in that?)

INGREDIENTS:
1 cup white sugar
1 cup margarine/butter
2 eggs
2 cups all-purpose flour, portioned
1 tsp baking soda
1 1/4 tsp baking powder
3 ripe bananas (300ml or 1 1/4 cups)
OPTIONAL: 1 – 2 cups raisins OR chocolate chips OR chopped walnuts …
DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit. Lightly grease or line muffin tins.
2. In a large bowl, cream together sugar and margarine.
3. Add the eggs. Mix well.
4. Add the flour, 1/2 cup at a time to ensure easier mixing. Add the baking soda and powder about halfway through. Continue to mix well, adding the rest of the flour in 1/2 cup portions.
5. In a separate container, mash the bananas until mostly liquified – some smaller chunks still left is good. Add to batter and mix well.
5a. OPTIONAL VARIATIONS: add the raisins/chips/walnuts to the entire batch, or wait and do just half… depending on what people like! 🙂
6. Spoon by large teaspoons full into mini greased or lined muffin tins. Bake for 12 – 15 minutes. *
*NOTE: You could put the banana bread batter in a greased loaf dish/pan and bake for 1 hour. You could, instead, also make regular sized muffins, baking them for 20 – 25 minutes.
