Pesto-parmesean chicken bake – one of my favs 🌱single serve meal prep bowls
👩🏻🍳These single serve meal prep bakes are so convenient – especially when you’re tight on time, too tired to cook and/or need a post workout meal ASAP.
They’re as easy as 1- 2-3:
cut, assemble, bake.
🌱Pesto-Parmesan Chicken Bowl (serves 1)
➕2 tbsp uncooked rice
➕75g lean chicken breast
➕Salt & black pepper to taste
➕1 tsp pesto
➕1 tbsp non-fat plain Greek yogurt
➕½-1 tbsp sundried tomatoes
➕1/4c mushrooms, cut up
➕1/4c baby spinach
➕1/4c chicken broth
➕2 tbsp shredded parmesan
➕Basil (garnish)
Preheat oven to 350F. Once bowls have been assembled, cover with foil and bake 50mins or until cooked through. Garnish with basil.
