This week, Marc from Project 40 is bringing you another delicious Fakeaway Friday recipe! He’s whipping up a healthier and more budget-friendly version of Kung Pao Pork inspired by Pinch of Nom. Dive into this mouthwatering dish featuring tender diced pork, crunchy vegetables, and a flavorful sauce—all without breaking the bank!

🥩 Ingredients:

• 400g lean diced pork
• 2 tbsp cornflour
• 1 tsp Chinese five spice
• 1 tsp toasted sesame oil
• 2 spring onions, trimmed and thinly sliced

🥢 Sauce:

• Low-cal cooking spray
• 60g onion, peeled and thinly sliced
• 160g diced red pepper
• 60g carrot, peeled and cut into thin batons
• 2 garlic cloves, peeled and crushed
• 1 x 225g can bamboo shoots or bean sprouts
• 1 tbsp light or dark brown sugar
• 3 tbsp granulated sweetener
• 60ml cider vinegar
• 1 tbsp runny honey
• 2 tsp dried chilli flakes
• 2 tbsp tomato puree
• 1 tbsp dark soy sauce

👩‍🍳 Cooking Instructions:

1. In a sandwich bag, mix the diced pork with cornflour, Chinese five spice, and sesame oil.
2. Preheat an air fryer to 180°C. Cook the diced pork for 15-17 minutes until crispy.
3. In a wok over low heat, add cooking spray and sauté carrot, onion, and red pepper for 6-7 minutes until softened.
4. Add garlic, cider vinegar, soy sauce, and honey. Cook for another 2 minutes.
5. Stir in bean sprouts and cook for an additional 10 minutes.
6. Once the pork is crispy, combine it with the sauce in the wok.
7. Serve with 50g of basmati rice per serving.
