Easy Crispy Oatmeal Cookies! Healthy Recipe! (NO butter, NO eggs, NO flour) Ingredients:
1 cup ground old fashioned rolled oatmeal
1 cup old fashioned rolled oatmeal
3/4 teaspoon baking powder
1/3 cup melted coconut oil
1/4 cup brown sugar
3 tablesppons any dairy or nondairy product of your choice
1/4 teaspoon salt
1 teaspoon vanilla
1/4 cup pecans, chopped or add in of your choice

M we are going to start off by chopping up some pecans you can use any kind of nuts you want you can also use some dried fruit cranberries raisins apricots whatever you would like to go into it you’ll need about a four of a cup of your dried fruit or your nuts whichever

One you want to use in a large mixing bowl we’re going to add coconut oil you want to make sure your coconut oil is melted but not hot so let it cool just a few seconds add in your coconut oil that’s 1/3 cup of coconut oil we’re

Adding in a 4 cup of brown sugar you can use any sweetener that you like going in with a teaspoon of vanilla and 3 tablespoon of any dairy product that you like you can use milk heavy cream I am using chabana hazelnut creamer you can use hazelnut or any

Flavor you can use plain I actually like this because it has no artificial flavors it has no artificial sweeteners in it uh it’s nonc caragen no RBST and no emulsifiers so this is just what I drink this is not sponsored but this is what I drink in my coffee when I’m not

Aside now we’re going to grind up a cup of oldfashioned rolled oats you don’t want to use instant oats you want to use the old oldfashioned rolled oats so we’re going to grind these up now to our wet ingredients we’re going to add in our ground

Oats 34 tpoon of baking powder this is A4 teaspoon so I’ll do three of these that’s 1/4 that’s 24 and this makes 34 and we’re also adding in a cup of just regular rolled oats go ahead and combine this if your coconut oil has not started to solidify then your dough will be

Pretty wet and that’s fine we’re going to let it sit for maybe a few minutes until it actually solidifies now if your house is warm you may want to put it in the refrigerator and let it solidify in the refrigerator for a few minutes but if

Your home is pretty cool you can just let it sit out for a few minutes and solidify it should look like this which is pretty loose for cookie dough but once that coconut oil solidifies it’s going to be nice and firm okay let’s go ahead and add add in our

Nuts and stir those in as well okay we’re going to let this sit and we’ll be back okay our coconut oil has solidified and we are ready to actually form our cookies at this point make sure your oven is preheated to 355° f okay now I’m going to be using

This scooper right here you can simply use your hands or any size you want I have a miniature one but for these cookies I just like them to be kind of large so I like to use my larger one but you can use any size and if you don’t

Have one just simply use your hands or maybe use a measuring device like a fourth of a scoop just so that your cookies can come out pretty even so what we want to do is grab a scoop and I’m flattening the scoop out pretty much then you’re going to put it in your

Hands and I’m wasting and form it into a ball press it together to form into a nice ball then place it down and keep doing that until all of your dough I won’t call it batter but all of your dough has been used up try to make

Sure they are close to size as possible uh we’re not weighing them so they won’t be absolutely the exact same size and that’s fine and you can get about with a smaller scoop you can get about a dozen of these and another good thing about these is that they freeze well they will

Freeze up to 3 months after you bake them so if you want to freeze them just make sure when you freeze them when you put them in the freezer you actually put a piece of parchment paper in between each cookie when it comes time to Tha it out

Just sit it on your counter and let it Tha out so I’m going to form the rest of these right quick so we can get them in the oven okay once you have them formed into a ball you just want to take your hands and just kind of flatten them out some

But still keeping their shape so you may have to go around them a little bit on the edges and kind of make them almost like a Patty but just spread them out you don’t have to flatten them all the way but you do want to flatten them

Some trying your best to keep them all roughly the same size and you want to have them at least about an inch apart on your parchment paper okay we are going to bake these in a 355° oven for about 18 to 22 minutes if you want your cookies to be kind of

Crispy on the edge and still soft in the middle you want to stay towards the 18 minute side if you want them to be kind of crispy all the way through then you want to put them in there for the 22 minutes but check them for your crispiness and your dness according to
