Ingredients:

6 eggs
1 cup sugar
1 cup milk
1/4 cup ghee (clarified butter)
1/4 teaspoon cardamom powder
A few strands of saffron (optional)
Chopped nuts (almonds, cashews, pistachios) for garnish

Instructions:

Prepare the Eggs: Crack the eggs into a bowl and beat them well until they’re frothy.

Cooking Eggs: Heat a heavy-bottomed pan or kadhai and add ghee to it. Once the ghee is melted, pour in the beaten eggs and stir continuously on low heat.

Adding Sugar: After a few minutes, when the eggs start to thicken slightly, add sugar and continue stirring.

Infusing Flavors: Add cardamom powder and saffron strands to the mixture. Stir well to ensure even distribution of flavors.

Cooking Further: Keep stirring the mixture continuously to prevent it from sticking to the bottom of the pan. Slowly, you’ll notice the mixture thickening and coming together.

Adding Milk: Once the mixture has thickened considerably, add milk gradually while stirring continuously. This will help in achieving a smooth texture.

Cook Until Thickened: Continue to cook the mixture, stirring frequently, until it reaches a halwa-like consistency. It should be thick and glossy.

Garnish and Serve: Once done, remove the pan from heat. Garnish the egg halwa with chopped nuts of your choice.

Serving: Serve the egg halwa warm or at room temperature. It can be enjoyed as a dessert or a sweet treat.

Enjoy your delicious egg halwa!
