Healthy Grilled Cheese Sandwich: Avocado Lime Sauce Edition



Ingredients (Serves 1):

For the Avocado-Lime Sauce:
1. 1 Tbsp Extra Virgin Olive Oil
2. 2 Garlic Cloves
3. 5 Cilantro Sprigs
4. 1 Tsp Plain Greek Yogurt
5. 1 Avocados – Mashed/Blended
6. 1/4 Cup Diced Scallions
7. 1/2 Tsp Salt
8. 1/2 Tsp Pepper
9. Half a Lime

For the Spread:
1. 2 Tsp Melted Butter
2. 1 Tsp Extra Virgin Olive Oil
3. 1/2 Tsp Garlic Powder
4. 1/2 Tsp Pepper
5. 1/2 Tsp Oregano
6. 1/2 Tsp Red Chilli Flakes
7. 1/2 Tsp Salt

For the Bread:
Two Slices of Whole Wheat Sourdough Bread. You can also substitute with: Sprouted Multigrain Bread, 100% Whole Wheat Bread. Other options: Oat Bread, Flax Bread, 100% Sprouted Rye Bread.

Procedure:

Step1: Prepare Avocado-Lime Sauce:
1. Add all the sauce ingredients to a food processor. Blend until you achieve a smooth and creamy texture.
2. Transfer the sauce to a dish and set it aside for later.

Step2: Prepare the Spread:
1. Mix melted butter and olive oil with the selected seasonings in a bowl until well combined.
2. Stir the mixture until it’s uniformly blended for that perfect spread consistency

Step3: Prepare the Avocado-Lime Grilled Cheese Sandwich:
1. Spread the seasoned butter-olive oil spread on one side of each bread slice.
2. Turn the slices over, ready for the next layer of flavor.
3. Generously apply the other side with the rich avocado-lime sauce for that creamy zest.
4. Shred a modest amount of mild cheddar cheese, just enough to cover one side of the bread.
5. Sprinkle the cheese on the sauced side of one slice, creating a cheesy bed.
6. Press both slices together, marrying the flavors into one sandwich.
7. Warm a pan over medium heat and brush lightly with olive oil.
8. Once the pan is heated, place the sandwich in the pan
9. Cook until the bottom slice turns a golden crisp, then flip.
10. Press down gently with a spatula to encourage the cheese to melt into gooey goodness.
11. Sear the other side until it echoes the same golden crispness.
12. Transfer the sandwich to a chopping board with care.
13. Halve the sandwich to reveal the melty middle, serve and enjoy!
