Curd Rice made with millet, curd and seasoned with spices, is a traditional South Indian dish, known for its simplicity and soothing flavor.

Serves : 2
Ingredients:

Kodo Millet/Little Millet/Barnyard Millet (Any 1) – 1/2 cup
Water to cook 1 1/2 cup
Oil 1 tsp
Salt – 1/2 tsp

For Tempering and seasoning

Sunflower Oil – 2-3 TBS
Mustard – 1/2 tsp
Curry Leaves – 10-15
Urad Dal – 1 TBS
Ground Nut – 2 TBS
Hing / Asafoetida – 1/4 tsp
Ginger (Grated) – 1/4 inch or 1/2 tsp
Dry Chilly – 2-3
Pomegranate Seeds – 1/4 cup
Green Chilly – 2
Onion – 1 chopped
Coriander Leaves – Handful
Curd – 1/4 ltr
Water – 1/4 cup
Salt – As required

Method:

Wash and pressure cook millet adding 1:3 ratio water, 1 tsp oil and salt

To temper – Heat oil add mustard, when it splutters add, urad dal, dry chilly, groundnuts, curry leaves, saute till colour changes, add asafoetida and grated ginger, switch off the stove.

Add cooked millet, mix well, add curd, onion, greenchilly, pomegranate, salt and required amount of water, mix well, garnish with coriander leaves.
