Materials

Water glass measuring 200ml

1kg flour (8 cups)
600 ml water (3 cups)
25 g salt (1 tablespoon)

350 g butter for the intermediate layers (you can also use half and half with oil)

Preparation of

Let the water be warm, take the flour into the mixing bowl, add all your ingredients and get a soft dough that is less hard (Don’t be afraid of it being hard, the dough will release itself when it rests🫠) Cover it airtight and let it rest for about 30 minutes. Divide the rested dough into 28 equal pieces and make meringue for about half an hour. Let it rest like this (the rested dough rolls out well)
Now we start

Divide the dough into 2 groups, bottom 14, top 14, roll out the dough to the size of a serving plate (by flouring it).

You applied oil to the 1st layer, added the dough again, applied the oil again and added the 3rd dough. Now stop, combine the ends and enlarge the dough, not much, but 2 times as much. You applied oil again, now enlarge the dough in the size of a serving plate with your hand (If the flour is of high quality, it will never tear!) There is already oil. Add it to the dough you spread, repeat the same process until the dough is gone, pull the dough from the edges and roll it out to the size of the tray (I used a drum baking tray, large size). Spread the first layer on your tray, I used shavak cheese. The filling is completely up to you, whether it is spinach or minced meat and potatoes (Optional) and the remaining dough. Follow the same process, put it on your tray, combine the ends of the 2 dough, you don’t have to cut it like me, you can cut it like a square or baklava slice if you want, you will have some oil left, spread it on the pastry you sliced, bake it at 190 degrees until it turns pomegranate, my dear 🫠
