Lobia Salad is an easy & healthy protein – packed recipe, made with lobia also known as cow pea / black eyed bean & a lot of vegetables.
This is a popular Mediterranean recipe but we have prepared it in a traditional Indian style by adding tamarind water & honey.
Lobia is a rich source of fibre. Every 100 grams of serving provides 8 grams of protein and 6.6 grams of fibre.

Ingredients
Lobia (cow pea) – ½ cup (100g)
Salt – ½ tsp
Water – 1 cup
Onion – 1 small (chopped)
Spring onion bulb (chopped)
Spring onion greens (chopped)
Cucumber – (cut in cubes)
Tomato – 2 (deseeded & cut in cubes)
Coriander leaves (finely chopped)
Tamarind pulp – 1 tbsp
Extra virgin olive oil – 1 tbsp
Salt – 1 tsp
Black pepper powder – 1 tsp
Oregano – 1 tsp
Chilli flakes – 1 tsp
Honey – 2 tbsp
Lemon juice
