Palak Pulav, or Spinach Pulao, is a nutritious and flavorful dish made with spinach and rice. Here’s a simple recipe for you:

Ingredients:
1 cup basmati rice, washed and soaked for 30 minutes
2 cups fresh spinach (palak), washed and chopped
1 onion, thinly sliced
2-3 green chilies, slit lengthwise
1-inch piece of ginger, grated
3-4 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
2 tablespoons ghee or oil
2 cups water
Fresh coriander leaves for garnish (optional)
Lemon wedges for serving (optional)
Instructions:
Preparation: Wash the rice and soak it in water for about 30 minutes. Drain the water and set aside. Also, wash the spinach thoroughly and chop it finely. Keep all the other ingredients ready.
Sautéing: Heat ghee or oil in a pan or pressure cooker over medium heat. Add cumin seeds and let them splutter. Then, add sliced onions and sauté until they turn golden brown.
Adding aromatics: Add grated ginger and minced garlic to the pan. Sauté for a minute until the raw smell disappears.
Adding spices: Add the chopped tomatoes, slit green chilies, turmeric powder, red chili powder, garam masala powder, and salt to taste. Cook until the tomatoes become soft and the spices are well combined.
Adding spinach: Add the chopped spinach to the pan and sauté until it wilts and reduces in volume.
Adding rice: Drain the soaked rice and add it to the pan. Stir gently to combine the rice with the spinach mixture.
Cooking: Pour 2 cups of water into the pan. Bring the mixture to a boil. If using a pressure cooker, cover the cooker with its lid and cook for one whistle on medium heat. If using a pan, cover it with a tight-fitting lid and let the rice cook on low heat until done, about 15-20 minutes.
Fluffing: Once the rice is cooked and the pressure releases naturally, fluff the pulao gently with a fork.
Garnish and serve: Garnish with fresh coriander leaves (if using) and serve hot with yogurt, raita, or pickle. You can also serve it with lemon wedges for extra tanginess.
