Salmon Sliders
2 kg salmon
spinach leaves
parsley
2 tomatoes, 1 sliced, 1 diced
1 tsp pepper each dish, 3/4 tsp salt for both
1 lemon juiced & zest
olive oil, lime juice
1 hot pepper, garlic clove, onion, finely chopped-optional
Cut salmon into 2 inch squares and place in the oven dishes. Top with all the ingredients except spinach. Cover dish and bake at 350 F 34-40 minutes or 400 F 25 – 30 minutes. Internal temperature of 63C/143F. Halfway through baking put spinach on top.

Pasta & Sauce
1/2 bell pepper
2 mushrooms & tomatoes
spinach leaves, parsley
1/4 cup vegetable stock, red wine-optional
1 tbsp white wine & balsamic vinegar, olive oil
3/4 tsp sea salt
1 tsp pepper, Italian seasoning
Chop very finely except spinach and parsley. Cook bell pepper for 1 minute in hot skillet with oil, then add mushrooms and tomatoes and cook for 5 minutes. Add the rest of the ingredients and cook for 3 minutes.
Boil water in a big pan, add olive oil, dash of salt and cook noodles for time on package. Drain. Add olive oil and a bit of sauce.

Salad and Dressing
Lettuce, spinach leaves, parsley
Cucumber, tomato, apple, kiwi, mandarin orange, carrots
Make as much as you want. Chop carrots. Peel & segment the orange. Thinly slice the rest and arrange on the salad leaves.
1/2 cup plain greek yogurt, salsa
1 tbsp balsamic vinegar, lime juice, olive oil
1/3 tsp sea salt, pepper
1 fruit cup in juice (no sugar added)
Mix all ingredients together.

The Meal
Put the salmon on the salad. Top with dressing. Put pasta on plate and top with sauce. If you need to reheat the salmon, pasta and sauce do that on a separate plate.
