Easy healthy dinner: Chipotle Smash Burger Tacos (220kcal, 23g protein per taco) #healthyrecipes

Ingredients (makes 4 tacos):
500g lean beef mince
4 corn tortillas
100g cheese of choice
1/4 red onion (sliced)
2 cups lettuce (shredded)
1 tbsp chipotle paste/sauce
3 tbsp greek yoghurt

1. For sauce, combine chipotle and greek yoghurt (so easy, I know).
2. Divide your beef into 4, roll into balls.
3. Cut a square of baking paper.
4. Place the beef on a tortilla, the baking paper over the top, then press down to spread the beef evenly. Season with salt and pepper.
5. Get a pan on a high heat, add 1 tbsp of oil.
6. Cook each taco beef side down for 1-2 min, turn, sprinkle cheese over top and cover to melt. Remove after 1 minute.
7. Layer taco with onion, lettuce and then sauce over the top.
8. Enjoy!
