Sure, here’s a simple recipe for a healthy and delicious Corn Palak (Spinach) Dry dish:
Ingredients:
– 1/5 cups fresh or frozen corn kernels
– 1 cups chopped spinach (palak)
– 1 onion, finely chopped (optional)
– 2 cloves garlic, minced
– 1/2 teaspoon black pepper powder
– 1/2 teaspoon red chili flacks (adjust to taste)
– Salt to taste
– 1 tablespoon oil (you can use olive oil for a healthier option) or Ghee
– Fresh coriander leaves for garnish (optional)

Instructions:
1. Heat ghee or oil in a pan over medium heat.
2. Add minced garlic and sauté until light golden brown.
3. Add chopped onions ( if you are adding ) and cook until they turn translucent.
4. Add chopped paneer or tofu and cook for 5 – 7 mins.
5. Add the chopped spinach, cook till its bit tender.
6. Add the corn kernels and Mix well.
7. Cover the pan and let it cook for about 8-10 minutes, stirring occasionally, until the spinach wilts and the corn is cooked through.
8. Once done, remove the lid and let any excess moisture evaporate, if needed.
9. Garnish with fresh coriander leaves (optional).
10. Serve hot as a side dish or with toasted bread, sandwiches, roti or rice.
