I crafted this raw mango couscous salad to enjoy a refreshing and healthy option during the hot weather. The addition of fresh, sweet and sour mango provides a delightful balance of tangy and sweet flavors. I included a variety of fresh vegetables to enhance the nutrient content and infuse the dish with vibrant colors and flavors. For an added boost of protein and a satisfying crunch, I tossed in fried peanuts. Fresh grated coconut lends a subtle sweetness, while green chili offers a spicy kick. The combination of coriander and mint enhances the overall flavour, pomegranate seeds contribute both colour and additional nutrients, and a drizzle of olive oil perfectly rounds out the texture of the salad.
Couscous has lots of health benefits. So easily you can include this whole grain in your diet. This is very healthy and nutritious option who all loves salad and would like to try something new.
