This savory high protein veggie cottage cheese squares soo good!!
This delicious snack with 7g per of protein and 80kcal per square is just perfect as a healthy savory snack and also great for meal prep!
Ingredients:
1 cup (250g) cottage cheese
6 eggs
1/2 cup (75g) peas
250g broccoli, chopped
1 medium carrot, chopped
2 tbsps almond flour ( or wholemeal flour)
pinch of salt and pepper
30g of grated cheese
Whisk together cottage cheese, the eggs, and wholemeal flour until well combined.
Season with salt and pepper or your seasonings of choice.
Chop broccoli and carrots and cook them in a steamer basket or sauté in a pan until tender.
Stir the veggies into the cottage cheese mixture.
Grease a baking tin and line it with parchment paper so that the paper overlaps on two sides (makes it easier to remove the mixture from the tin later).
Pour the mixture into the prepared pan.
Sprinkle top with grated cheese.
Bake for 30-35 minutes or until golden brown at 175°C/ 350°F.
Set aside for 5-10 minutes to cool slightly before removing from pan and cutting into squares.
Serve warm or cold.
