Today I will show you in my daily Vlogmas vlog what I have been up to and how I spent my day. Since you seemed to enjoy my meal prep video that I posted a while ago, I thought I’d share with you how I make my healthy quinoa bowl from scratch. This is a dish that is really healthy, packed with many nutrients and it is also great for meal prepping.

Quinoa bowl recipe:
Ingredients:
1 sweet potato
Baby Spinach
Tomatoes
1 apple
Feta cheese
Pickled beets
50 g quinoa (1/3 cup quinoa)
100 ml water (1/2 cup water)
1 lemon
Oil
Pepper
Salt
Chili flakes
Chile lime seasoning (or any other seasoning you like)
Pre-heat oven (180°C / 350°F). Peel sweet potato and cut it into bite-sized pieces, then add oil and chile lime seasoning (or any other seasoning you like). Mix well and put the sweet potato pieces onto a baking tray (I like to line my baking tray with aluminum foil). Bake for 25 minutes.
Meanwhile, cook the quinoa according to the instructions on the package. Wash the baby spinach and add it to a bowl (I like to use about 2 hands full of baby spinach per portion).
Then cut the feta cheese into small pieces (I like to use about 1/3 of the package per portion).
Wash the tomatoes and slice them in half (I like to use 5 snack tomatoes per portion).
Wash the apple and slice it into thin slices (I usually use 1 apple per portion).
Add some pickled beets to the quinoa (2-3 tbsp) and season it with salt, pepper, chili flakes and the juice of 1 lemon.
Add everything to a bowl and enjoy!
(The quinoa and the sweet potato should be enough for 3 people).
