To Cook Dal

Toor Dal – 1/2 Cup
Turmeric Powder – 1/4 Tsp
Hing / Asafoetida
Salt – 1/2 Tsp
Peanuts – 1 Tbsp
Water – 2 Cups

For Tempering

Oil – 1 Tbsp
Ghee
Mustard Seeds -1 Tsp
Cumin Seeds – 1 Tsp
Red Chilli – 2 Nos
Green Chilli – 2 Nos
Hing / Asafoetida
Curry Leaves
Tomato – 2 Nos
Turmeric Powder – 1/4 Tsp
Chilli Powder – 1 Tsp
Coriander Powder – 1 Tsp
Salt – 1/2 Tsp
Jaggery

To Make Dhokli

Wheat Flour – 1 Cup
Turmeric Powder
Chilli Powder – 1/2 Tsp
Cumin Powder -1/2 Tsp
Salt – 1/4 Tsp
Ajwain – 1/2 Tsp
Oil – 2 Tsp
Water

Prep Time: 20 mins
Cook Time: 40 mins
Servings: 3-4

METHOD:

For making the Dal

1. Wash and soak toor dal in water for 1 hour.
2. Transfer the soaked dal with water to a pressure cooker and add salt, turmeric powder, hing, peanuts. Add some more water, mix well and pressure cook on medium flame for 4-5 whistles.
3. Add some more water, mix well and pressure cook on medium flame for 4-5 whistles. Keep the cooked dal aside.
4. Take ghee and oil in a kadai. Add mustard seeds, cumin seeds and saute.
5. Once the mustard seeds start splattering, add red chillies, green chillies, hing and curry leaves.
6. Then add tomatoes and mix well. Add turmeric powder, red chilli powder, coriander powder and mix well.
7. Add salt and cook the tomatoes till they are mushy. Then add the cooked dal on a medium low heat.
8. Mix well. Cover and cook for 5 mins on a medium flame.
9. After 5 mins, add jaggery for balancing the flavors. Mix and keep the dal aside.

For making the Dhokli

10. Take wheat flour, turmeric powder, red chilli powder, cumin powder, salt, ajwain in a large bowl.
11. Mix well and add some oil. Mix again. Now add water and prepare a nice dough.
12. Knead the dough for a minute or two. Cover and let it rest for 10 mins.
13. After 10 mins, divide the dough into small portions and roll out into medium thickness rotis.
14. Cut the rolled out dough into diamonds with a pizza cutter or a knife. Kepe them aside.

For the Dal Dhokli

15. Now heat the dal once again and add more water if it is thick.
16. Gently drop the prepared dhoklis into the dal. Cover and cook for 15 mins on a medium flame.
17. Affter 15 mins, the dhoklis will be nicely pumped up.
18. At this point, sprinkle some finely chopped coriander leaves and turn off the heat.
19. Delicious Dal Dhokli is ready to be served hot and nice. Sprinkle some lemon juice for an added flavour before serving.

Dal Dhokli is a Gujarati dish which can be called an Indian version of pasta made mainly with lentils and wheat flour. A lentil base of soupy consistency is made and wheat flour pasta is cooked in it. This dish is native to Rajasthan and Gujarat in India. This is enjoyed for breakfast or lunch or even dinner. suban Dal DOI is a traditional delicacy
in the Gujarati Cuisine now this is
typically made with seasoned dough
pieces that is wheat flour cooked in
lentils that is the Dal now this is very
popular in the states of Gujarat and
Rajasthan and there are different
variations to it it’s a very wholesome
and very tasty dish so let’s get started
and check it out for this recipe I’ve
taken about half cup of T Dal and I have
soaked it for about 1 hour to the
pressure cooker add the soak Dal along
with the water to this I’m adding 1/4
teaspoon of turmeric powder just a pinch
of Hing half teaspoon salt just a few
peanuts it’s roughly about a tablespoon
so I’ve added a little more water
roughly about 2
cups just give it a quick mix mix you
can see the D is completely immersed the
reason I’ve soaked the D so that it
Cooks well and it’s nice and mushy
pressure cook on medium flame for about
four to five
whistles you can see the D is cooked
beautifully remove it and keep it aside
so the next step is to temper the Dal
take a nice white Kai add 1 tbsp of oil
and 1 spoon of ghee this add 1 tpoon of
mustard 1 tpoon cumin seeds
once the mustard seeds start crackling
add two red chilies half add two green
chilies slit I’m also adding a pinch of
Hing that is esta powder also add a few
Curry
leaves next add two mediumsized Tomatoes
chopped mix the tomatoes well along with
the rest of the

ingredients to this I’m adding qu
teaspoon of turmeric powder 1 tpoon red
chili powder and 1 tpoon coriander
powder mix everything well cook the
tomatoes till they’re a bit mushy once
you’ve mixed the spice powders now I’m
going to add the salt just adding about
half teaspoon of
salt so you can see the tomatoes are
cooked beautifully it’s nice and mushy
at this point I’m going to add the Dal
keeping the flame on low pour the cooked
Dal
just give it a quick
mix close the kar and cook the Dal for
about 5 minutes on medium
flame after 5 minutes let’s check on the
DAL to balance the flavors I’m adding a
piece of jagy so this will give a nice
mild sweetness to the dish mix
everything well if you don’t want Jagger
you can do it without it
now our Dal is ready let’s start making
the DOI for the doi to a nice white bowl
I’ve taken one cup of ATA that is wheat
flour add 1/4 taspo of turmeric powder/
taspo chili powder/ TPO cumin powder 1/4
taspo salt half teaspoon aen just add
about 2 tasps of oil just give it a
quick
mix so gradually start pouring water and
kneading the dough
so you can see I’ve kneaded the dough
nicely let this rest for about 10
minutes after 10 minutes you can see the
dough is nice and soft divide the dough
into equal size dough balls dust the
dough ball with a little flour and place
it on the rolling surface and roll it
out you don’t want it too thin or too
thick

you can see I’ve rolled it to a nice
medium size
thickness now I’m using a pizza cutter
and I’m going to cut it into diamonds
but you can cut into squares or
rectangles or whatever shape that you
like you can also use a knife if you
don’t have the pizza cutter I’m just
removing all the uneven pieces here and
just taking only the diamonds so this is
a nice pretty shape after you’ve made
the DOI just heat the d a little bit if
you feel the D is thickened you can just
dilute it by adding a little bit of
water once the Dal comes to a boil
gently start dropping the dys in batches
you don’t want to add all of them at one
time because they can stick to each
other once they’re in the Dal after
you’ve added all the D close the kai and
cook for about 10 to 15 minutes on
medium
flame after 15 minutes you can see how
the does have all plumped up so
beautifully so finally finish off by
adding some finely chopped coriander
leaves see those doav are beautifully
cooked the Dal is so creamy and nice
turn off the stove and you can serve
this Dal DOI nice and hot

it’s time to taste this absolutely
delicious Dal do clean now before
serving it’s always nice to just squeeze
a little bit of lemon
juice just garnish it with a few drops
of lemon juice and some coriander and
you can serve it nice and hot so there
you go it’s so creamy and so
nice m
this is so
delicious the do is cooked perfectly
it’s so soft and it’s absorbed all the
flavors from the Dal the Dal is so
creamy and so yummy this is a very
wholesome dish I think you can enjoy it
as is I would prefer it to eat as is but
if you do want to have it with something
else you can have it with some rice or
