Virat Kohli’s favorite Superfood Salad is something everyone should try.

Virat kohli, India’s pride and everyone’s favourite is a big foodie but at the same time a conscious eater too. If he indulges (rarely) then he and Anushka smash the gym till its all gone😊

He likes to eat Dimsum, salads, rajma chawal, chhole and all other lentils.But curries are a strict No -No for him.

He loved to have superfoods as these are gluten-free. This superfood salad is from his restaurant one8 commune only which he crafted along with the chefs after telling them his preferences. In this salad there is superfood quinoa, greens, watermelon, seeds n nuts.
Vinaigrette dressing is used and for crunch cashews and pumpkin seeds too.

He says that this salad is a complete food with all the nutrients of a balanced diet. A very simple recipe but loaded with minerals and full of taste.

Sharing the recipe here, you can make it as it us or you can adjust ingredients as per your liking.
I used lettuce as rocket leaves are not easily available in my area.

Ingredients
Rocket leaves or Lettuce 1 Cup
Parsley Few Sprigs
Roasted Veggies (Bell Pepper, zucchini, paneer etc)1 pc
Scooped Watermelon balls 1/2 Cup
Boiled Quinoa 1/2 Cup
Cashews
Pumpkin seeds

Vinaigrette
Olive oil 3 Tbsp
Vinegar 1 tbsp
Honey 1 tbsp
Mustard powder 1/2 tsp
Chilli flakes 1/4 tsp
Salt as per taste

How to boil Quinoa
1. Slightly roast quinoa for a minute or two.
2. Soak it for an hour.
3. Put it in boiling water for 2-3 minutes.
4. When soft, Put it in strainer.
5. Let it cool completely before using for salad.

Notes
1. You can take any greens in place of rocket
2. Use cashews or any other nuts like walnuts, almonds etc.
