Sundried tomato, feta, egg & hashbrown bake 🍳 single serve meal prep bowls
👩🏻🍳this high protein single serve meal prep bake is so convenient – especially when I’m tight on time, too tired to cook and/or need a post workout meal ASAP.
Ingredients:
1 egg
1/2c egg whites, liquid
1/4 tsp red chili flakes
salt & pepper (to taste)
1/2c spinach and mushrooms
1.5 tbsp sundried tomatoes (save 1/2 tbsp)
3/4c shredded hashbrowns, thawed if frozen
3 tbsp feta, reduced fat (save 1 tbsp)
Pre-heat oven to 350F. Place oven-safe bowl(s) on baking tray. Lightly spray with olive oil cooking spray. Watch short for steps. Make sure hashbrowns are submerged in the liquid. Bake for 30 mins, remove from oven and sprinkle remaining feta. Continue to bake for 5-10 mins or until cooked through. Once baked, top with remaining sundried tomatoes.
