okra is extremely good for you and it also happens to be in season and my favorite way of making okra into a low calorie super healthy snack is to pickle it I used a 2:1 ratio of rice vinegar to water added about 2 cups of brown allulose as well as a tablespoon of turmeric I sanitized two jars by baking them for 10 minutes and then proceeded to cut three Sano Peppers leaving the seeds in my favorite type of pickle to snack on is any kind of sweet heat style pickle which usually is packed full of sugar which is why I replace it with allulose in each jar I added some starus and a bay leaf as well as a tablespoon of fennel and mustard seeds because okra is full of air it’s important that when adding your vinegar mixture to give it some time for all that air to rise the surface you want that liquid to cover everything this is my first time making my own pickled okra the stuff that you can get at the store is really just not good I think next time I’m going to Triple the amount of sanos cuz I want it to be spicy spicy and just use straight up rice vinegar instead of cutting it with water because I didn’t find it to be very tart either all in all though I think I’m going in the right direction
