Ingredients:
4 skinless and boneless chicken thighs
1 tbsp olive oil
1 lemon
1 large fennel bulb, finely sliced
Handful of olives, pitted and halved
75g rocket
75g kale
½ small packet of parsley, plus extra to serve
Handful of roasted hazelnuts, roughly chopped
1½ avocado, cut into wedges
For the lemon dressing:
½ avocado
½ tin anchovies (optional)
1 tbsp capers
1 tsp Dijon mustard
2 tbsp olive oil
½ preserved lemon
