Pasta is a versatile and beloved dish enjoyed by many. However, traditional pasta recipes often incorporate cheese, butter, or cream, which are high in fat and calories. For those seeking a healthier alternative, a pasta dish made without these ingredients can be just as delicious and satisfying. This recipe features wholesome ingredients like makhana (fox nuts), cashews, paneer and lots of colourful vegetables , rich in anti oxidants, offering a nutritious and flavourful twist on classic pasta.

Ingredients:
Pasta 2 Cup,
Water 2 Cup,
Kashmiri Red Chilli Whole soaked 4,
Makhana (Fox Nuts) 10-12,
Cashews 10-12,
Paneer 100 gms,
Onion 2 Medium,
Tomato 1 Medium,
Cucumber 1 Small,
⁠⁠Carrot 1 Small,
Broccoli 1 floret (Approx 150 gms),
⁠⁠Red bell pepper 1 small,
Yellow bell pepper 1 small,
⁠⁠Capsicum 1 small,
Salt 1 tsp,
Oil 2 T,

Procedure
1. First of all, take a sauce pan and add some oil to it.
2. Cook onions till dark brown. Keep it aside.
3. In the same pan, saute broccoli, carrot and cucumber for two minutes and cover it with lid on low flame for two min. The vegetables are slightly soft now. Take out the vegetables and keep them aside.
4. In the same saucepan now, add water, salt, oil and pasta. Cover with lid and boil it for 10 minutes till pasta becomes absolutely soft. Reduce the flame to low and add the stir fried vegetables along with chopped Bell Pepper and Capsicum. and mix with the pasta.
5. Sauce: In a blender, add already fried onions., soaked cashews, soaked red chilli, soaked Makhana and chopped tomatoes. Blend it. Now add some crumpled Paneer along with some water and make a creamy mixture.
6. Now add this sauce to the pasta mix and stir it. Add salt as per taste. Cook for another two minutes on low flame and your pasta is ready. Ganesh some shredded bell peppers.
