This recipe is about a healthy veg Suran.Suran sabji have lots of health benefits and its a root .Here in this video you can watch very quick and easy way of cooking suran/yam/elephant foot.

Method of preparation:-

First of all soak Suran in water so all the mud and dirt on outer layer removes easily.Peel the suran and cut into small cubes.Boil this cubes adding kokum or tamarind.Once boiled strain and keep aside.
Now heat some oil in kadhai and add mustard seeds.Let it crackle,add curry leaves and saute.Add ginger garlic paste and chopped onions,saute till soft.Add salt so onions cooks faster.Add chopped tomatoes and mix well.Cover to cook.
Add spices now,first garam masala,chilly powder,dry coriander powder and turmeric powder.Saute and add boiled suran.Mix well and cover to cook on steam for few minutes.Add salt if required.Garnish with fresh coriander leaves and serve.
