Healthy Chicken Meatball Pasta 🔥🤤

Ingredients:
– 2 chicken breasts
– 1 egg
– 100g breadcrumbs (add as you go to see how much you need)
– big handful of parsley & basil
– 2 garlic cloves
– lemon zest & juice
– pinch salty salty flavours & pepper

– any veggies you have available
– tinned tomatoes
– chicken stock
– garlic
– oregano 1 tsp
– parmesan
– salt & pepper

– wholewheat penne pasta

1. Blend up your meatball mix and roll into equal sized balls & fry off for a few mins each side (use a thermometer to be accurate)

2. Dice up your veggies and get them into the meatball pan and put your meatballs to the side – add all of the bits for your sauce and then get your pasta going

3. Plate up with plenty of parmesan and extra herbs and enjoy!!
