Viral cucumber salad

Ingredients:

2 large cucumbers, thinly sliced

1 small red onion, thinly sliced

2 tbsp rice vinegar (or apple cider vinegar)

1 tbsp soy sauce

1 tsp sesame oil

1 tbsp honey or sugar (adjust to taste)

1 tsp chili flakes (optional for a kick)

2 tbsp sesame seeds

Fresh cilantro or mint, chopped (optional)

Instructions:

1. Prepare the Cucumbers: Slice the cucumbers thinly. You can use a mandoline for even slices. Place them in a large mixing bowl.

2. Make the Dressing: In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and honey (or sugar). If you want a spicy kick, add chili flakes.

3. Assemble: Pour the dressing over the sliced cucumbers and red onion. Toss everything together until well-coated.

4. Garnish: Sprinkle sesame seeds and fresh herbs (like cilantro or mint) on top for added flavor and texture.

5. Chill & Serve: Let the salad chill in the fridge for about 10-15 minutes for the flavors to meld. Serve cold!
