Cheesecake just became the new salad 😏
Okay I don’t have anything else to say except for the fact that YOU NEED TO TRY THIS CHEESECAKE FRUIT SALAD OUT RIGHT AWAY.
It’s way too good to be true. 4 of us finished the bowl off in a few minutes. 😉
Recipe (makes 4 servings – 207 KCal | 8 g P | 10 g F | 21 g C | per serving | 4 g Fibre)
Ingredients
75 g raw malai paneer (must be super soft)
2 tbsp cream cheese
50 g Greek yoghurt
1.5 tbsp thick coconut milk
2 tbsp condensed milk – you can replace with sweetener of your choice
1 tsp vanilla extract
2 crushed digestive biscuits
50 g each of chopped fruits of choice – I use pomegranate, kiwi, pineapple, strawberries, blueberries and grapes
Method
1. Mix together all ingredients except fruits and biscuits to form a soft crumbly mixture.
2. Blend half of the mixture to a fine purée and mix it back in – this gives the dish two nice textures.
3. Simply layer it up in a cup or glass with fruits, add the crushed biscuits on top and DONE. You can serve it chilled if you have the patience, but we clearly couldn’t wait. 😂
