*Ingredients* :
* 3 tbsp oil
* 3 onions (finely chopped)
* Salt (to taste)
* 1 green chilli (slit)
* 1/2 tsp ginger garlic paste
* 1 tomato (chopped)
* Fresh coriander leaves (for garnish)
* 1/2 cup moong dal (yellow split lentils, soaked for 15 minutes)
* 1/2 tsp turmeric powder
* 3/4 tsp red chilli powder
* Water (as needed)
* 1/2 kg beetroot (grated or chopped)
*Instructions:*
1. Heat oil in a pressure cooker and sauté the onions with a pinch of salt until they turn golden brown.
2. Add the slit green chilli and ginger garlic paste. Stir well.
3. Add the chopped tomato and fresh coriander leaves. Cook until the tomatoes soften.
4. Add the soaked moong dal (yellow split lentils), turmeric powder, and red chilli powder. Stir and mix well.
5. Before adding the beetroot, check the salt and adjust if necessary.
6. Add the grated or chopped beetroot, mix everything together, and close the lid.
7. Cook for 3 whistles and let the pressure release naturally.
8. Your Beetroot Moong Dal is now ready to be served! Enjoy this hearty and healthy dish with rice or roti for a complete meal.
