Snickers Yogurt Bark
This is my favorite way to satisfy a sweet craving while still supporting protein and blood sugar balance. It tastes like a Snickers bar, but it’s made with simple ingredients that actually nourish you. The yogurt and protein powder create a creamy, protein-forward base, the date caramel adds natural sweetness and fiber, and the chocolate and peanuts bring that classic salty-sweet finish.
Ingredients
Yogurt Base
10 oz plain yogurt
2 scoops protein powder (about 50 g protein total)
¼ cup peanut butter
1 tsp vanilla extract
Date Caramel Layer
8 Medjool dates, pits removed
2 tbsp almond milk
Topping
½ cup dark chocolate, melted
⅓ cup peanuts
Pinch of flaky salt
Instructions
Add dates to a bowl and cover with boiling water. Soak for 10 minutes, then drain.
Blend soaked dates with almond milk until smooth and caramel-like.
In a blender or food processor, blend yogurt, protein powder, peanut butter, and vanilla until smooth.
Line a baking dish with parchment paper.
Spread the yogurt mixture evenly into the dish.
Spread the date caramel layer evenly over the yogurt.
Pour melted dark chocolate on top and gently spread.
Sprinkle with peanuts and finish with a pinch of salt.
Freeze for at least 2 hours, until fully set.
Slice into large pieces and enjoy.
Storage
Store in the freezer with parchment paper between layers. Let sit at room temperature for a few minutes before eating for best texture.
