This crustless pumpkin pie is insanely low in calories! The entire pie comes in at only 235 calories! It’s delicious and a perfect way to satisfy your craving for a delicious pumpkin pie while keeping your calories low.

I’ve lost over 130 pounds and have kept it off. Now I’m sharing some recipes with you that I eat that have helped me stay lean while still enjoying delicious meals all the time!

RECIPE:
Ingredients:
1.25 Cup / 295g Cashew Milk
1/5 Cup / 120g Egg Whites
3/4 Cup / 150g Zero Calorie Sweetener
1/2 tbsp / 3g Pumpkin Pie Spice
1/2 tsp / 1.2g Salt
1/8 tsp / 0.4g Black Pepper (optional)
15oz / 425g can of pumpkin puree

Preheat oven to 400° F / 205° C

Whisk all ingredients EXCEPT the pumpkin together in a large bowl until thoroughly combined. Gently fold the pumpkin puree into the mixture until everything is combined and uniform.

Spray a 9″ pie pan with cooking spray. Pour pie filling mixture into pan and bake at 400° F / 205° C for 15 minutes, then reduce oven temperature to 350° F / 175° C and bake for an additional 45 to 55 minutes until done.

Remove pie from oven and allow it to cool for at least 2 hours before eating. Even better if you let it chill for a few hours in the fridge after cooling!

Enjoy on it’s own, or with some Fat Free Reddi Wip or Zero Sugar Cool Whip!
