Oats Fried “Rice”
Ingredients (makes 2 servings – 358 Kcal, 26g P, 10g F, 41g C, 5g Fibre)
100 g rolled oats
50 ml hot water
2 tsp oil
1 tbsp chopped garlic
1 tsp chopped ginger
2 tbsp chopped spring onion whites/onion
1 big cup of chopped vegetables of your choice – I used 1/3 cup each of chopped mushroom, red and yellow capsicum, green and yellow zucchini
150 g diced protein of choice – I’ve used chicken breast but you can use paneer/tofu/soya
1 tsp soya sauce
2 tsp chilli flakes
1 tsp pepper powder
Salt and sugar to taste
1 tbsp spring onion greens
Method
1. Mix oats with hot water and microwave on high for 1 min.
2. Spread it on a frying pan and fry it up on a medium heat – keep stirring until it begins to turn darker and clump together (like rice). Takes about 4-5 mins.
3. Set that aside, and then sauté ginger, garlic and spring onion whites in oil until golden.
4. Add in all the chopped veg and protein.
5. Cook for a few minutes, add in the seasonings.
6. Sauté everything until the moisture begins to evaporate.
7. Add in the oats, and mix well.
8. Give it a taste – if it’s too dry, add a few spoons of hot water. But make sure not to add too much water or overcook it else the oats will start disintegrating.
9. Garnish with spring onion greens and serve immediately with a drizzle of chilli oil! 😋
