SPROUTED MOONG SALAD WITH JAGGERY TAMRIND DRESSING

– Full of Protein and all the benefits of raw vegetables & fruits. But this is not the twist, the twist is adding just a little peanuts and chips for that extra crunch. All this with specially curated jaggery dressing – olive oil, tamarind pulp, jaggery, lemon juice, salt & chaat masala.
Method-
– Prepare sprouted moong (Here’s how you make Sprouted Moong Beans-
1. Wash them
2. Leave them in soaked water for three hours
3. Remove water
4. Cover with a lid or plate
5. Leave them in the strainer in a warm place (like microwave or oven which are warm even when not in use) overnight )
– Blanch moong in hot salted water for 5-7 minutes
– drain out the water and let sprouted moong cool down
– add tomatoes, onion, coriander, boiled potato, green chilli, mint leaves, grapes, apple, cucumber, boiled beet root, carrots
– add peanuts and chips
– add dressing (olive oil, tamarind pulp, jaggery, lemon juice, salt & chaat masala.)
