A festive, colourful salad that’s perfect for your next holiday gathering!
Ingredients:
For the Salad:
4 cups chopped Swiss chard
1/2 cup pomegranate seeds
1 cup blackberries
6 tbsp pumpkin seeds
6 tbsp dried cranberries
6 tbsp chopped walnuts

For the Dressing:
2 tbsp olive oil
1/4 cup freshly squeezed orange juice
Pinch of salt (to taste)
2 tbsp maple syrup

Instructions:
Prepare the Swiss Chard:
Wash the Swiss chard thoroughly, then allow it to drain to remove any excess liquid. Chop the leaves into bite-sized pieces, discarding the stems or removing them with your hands if you prefer.

Assemble the Salad:
In a large bowl, combine the chopped chard, pomegranate seeds, blackberries, pumpkin seeds, dried cranberries, and walnuts. Toss gently to mix everything together.

Make the Dressing:
In a small bowl, whisk together the olive oil, freshly squeezed orange juice, salt, and maple syrup until well combined.

Serve:
Drizzle the dressing over the salad just before serving. Toss the salad to coat everything evenly, and enjoy!

Tips:
– After washing the chard, make sure to let any excess liquid drain off before assembling your salad.
– For the best flavour, prepare the dressing ahead of time, but don’t toss it with the salad until just before serving to keep everything fresh and crisp!
