Khichuri Recipe: A Comforting and Nutritious Indian Dish
Khichuri is a popular Indian dish made with a mixture of lentils, rice, and spices. This comforting and nutritious meal is perfect for any occasion.
*Ingredients:*
– 1 cup split red lentils (masoor dal)
– 1 cup split green gram (moong dal)
– 2 cups rice
– 2 medium onions, chopped
– 2 cloves garlic, minced
– 1-inch piece ginger, grated
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– Salt, to taste
– 2 tablespoons ghee or oil
– 4 cups water
– Fresh cilantro, for garnish
*Instructions:*
1. Rinse the lentils and rice separately and soak them in water for 30 minutes. Drain and set aside.
2. Heat ghee or oil in a large pan over medium heat. Add the chopped onions and cook until they’re lightly browned.
3. Add the minced garlic and grated ginger and cook for 1 minute.
4. Add the cumin, coriander, turmeric, and chili powder. Cook for 1 minute, stirring constantly.
5. Add the soaked and drained lentils and rice. Cook for 2-3 minutes, stirring constantly.
6. Add 4 cups of water and salt to taste. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils and rice are cooked and the mixture is creamy.
7. Garnish with fresh cilantro and serve hot.
