Pretzels & Healthy Breads
Basic Dough For Breads and Pretzels
2 cup Flour (Maida) 240 gm
2 cup Multigrain Flour (Atta) 260 gm
1 tsp Salt
5 tsp Dry Yeast
1½ cup Water
2 tbsp Sugar
¼ cup Warm Milk or 1 Egg Yolk
2 tbsp Butter, Melted & Cooled
Jalapeno and Sriracha Pull Apart Bundt Bread
Bundt Cake Pan of 10” Diameter
Proved Dough of 250 gm Flour (2 cup)
4 tbsp Chopped Jalapenos, Red or Green
2 tsp Nita Mehta Paneer Masala (Optional)
16 Small Cubes of Mozzarella Cheese
2 tbsp Melted Butter Mixed with 1 tsp Dry Parsley
2 tbsp Sriracha or Red Chilli Sauce
Black Sesame Seeds to Sprinkle
Pesto and Cheddar Babka
Proved Dough of 250 gm flour (2 cup)
4 tbsp Pesto, Store bought or homemade
½ cup Grated Processed or Cheddar Cheese
2-3 tbsp Sliced Olives
Tray Lined with Parchment Paper
2 tbsp Melted Butter
Topping (Mix Together)
1 tbsp Oats
1 tsp Flax Seeds
1 tsp Pumpkin Seeds
Pesto
1 cup Packed Fresh Basil Leaves
4-5 Flakes Garlic – Chop Finely
15 Almonds or 8-10 Walnut halves – Crushed Roughly
4 -5 tbsp Oil
¼ tsp Salt, or to taste
¼ tsp Nita Mehta Black Pepper
2 tbsp Finely Grated Cheddar / Processed Cheese
1 tsp Lemon Juice
Chocolate Cherry Babka Bun (Makes-4)
Ingredients
Proved Dough of 250 gm Flour (2 cup)
4 tbsp Cherry Topping or Jam
½ – ¾ cup Dark Chocolate Chips
4 tbsp Brown Sugar
1 tsp Nita Mehta Cinnamon Powder
Tray Lined with Parchment Paper
Garlic Bread
¼ of Proved Dough of 1 cup Flour
2 tbsp Cornmeal (Makki ka Atta), to Dust for Crisp Topping
½ cup Grated Pizza Cheese
Herbed Butter
2 tbsp Melted Butter
1½ tbsp Grated Garlic
½ tsp Oregano
½ tsp Red Chilli Flakes
¼ tsp Pepper
Pinch Salt
Method: –
1. Mix all ingredients together of herbed butter in a small bowl and micro 10 seconds to get fragrant.
2. Spread 2 tbsp cornmeal (Makki ka atta) on a work surface.
3. Roll out ¼ of the proved dough to about 8” diameter on it.
4. Spread herbed butter all over, keeping some for the top.
5. Spread cheese on ½ area.
6. Fold over and press, sealing the edges.
7. Lift carefully and put on a round greased tray, keeping the curved side of bread along the curved edge of the tray (to utilize space!). Brush remaining herb butter on top. Cut 1 ½ “broad strips till the end, starting from the sealed edge (curved side).
8. Prove for 20-30 min till double in size.
9. Bake on at 1800C in a preheated oven in the middle rack for 20 minutes.
10. Brush with herbed butter.
Pretzels (Makes- 4)
Ingredients
½ Proved Dough of 2 cup Flour
Tray lined with Parchment Paper
5-6 cup Water or Enough for the Pretzels to dip in
1 tbsp Baking Soda (Mitha Soda)
1 tbsp Melted Butter or 1 Egg White, to Brush Pretzels
Sea Salt
Red Chilli Flakes
Zaatar Spice
Sesame Seeds, Black and White
Dry Rosemary
Method: –
1. Once you are ready to bake, line baking trays with parchment paper.
2. Preheat oven to 2000C.
3. Put 6-8 cups water in a deep pan to boil.
4. Divide proved dough into 4 portions.
5. Flour a work surface nicely. Shape each portion into 20-24” long rope. Make U and twist. Twist again & bring ends down and stick.
6. Put 1 tbsp soda in boiling water. Let water boil again.
7. Put pretzel & boil for 30 seconds only. Do not turn. Just press with a slotted spoon so that they dip in boiling water.
8. Remove from water, draining the excess water, and place on the parchment lined tray.
9. Boil all, one by one and keep on the parchment lined tray.
10. Brush with butter or egg white (whisk egg white with 1 tbsp water to make egg wash)
11. Sprinkle sea salt, just a pinch on each. Sprinkle toppings of your choice. Put in preheated oven immediately at 2000C for 12-15 min. Check that they tun golden brown. Do not make them too brown as they become hard on doing so.
12. Immediately brush with melted butter when they come out of the oven. Serve with cheese dipping sauce.
Cheese Dipping Sauce
4 tbsp Mayonnaise
2 Cheese Slices, (Cheddar Cheese)
2 tbsp Sriracha Sauce or Red Chilli Sauce
3-4 Flakes Garlic – Chopped
¼ cup Water, or as needed
Pinch Salt
Method: –
1. Grind all together in a small grinder till smooth and saucy in consistency. Check taste. Serve with breads or pretzels.
