Apple Muffins
1 1/2 C whole wheat flour ( or all purpose)
1/2 C honey
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/4 C butter, melted (or coconut oil)
1 egg
1/3 C milk
1 tsp vanilla
1 C chopped apples, peeled
1/2 C apple sauce
Preheat oven to 375 F. Mix all ingredients together well. Line muffin tin and pour 1/2 C mix into each muffin slot. Bake for 25 minutes, or until well done.

Oatmeal Energy Bites
1 C rolled oats
1/2 C honey (can reduce to 1/4 if prefer)
1/2 C almond or peanut butter
1/4 C Chia seeds
1/2 C chocolate chips
1 tsp vanilla
Mix all ingredients together. Roll into 1 TBS balls. Place in refrigerator to chill for 30 minutes. Wrap in moistened parchment paper strips and store in refrigerator for up to 1 week.

Egg Muffin Cups
6 Eggs
1/4 C milk
1/2 C cheese, shredded
1/4 C diced peppers
1/4 C diced tomatoes
1/2 C ham, bacon or sausage (cooked)
salt and pepper to taste
Mix all ingredients well. Grease or line muffin tin. Place 1/2 C mixture into each muffin. Bake in 350F oven for 15 minutes or until fluffy and well done. Store in fridge for up to 5 days.
