For lunch today, Stephanie whipped up cauliflower rice, black beans and chicken with a Mexican seasoning blend and ate it over a bed of greens with fresh Roma tomatoes and salsa. Alane created a red wine infused brat dish with onions, sausage, and cherry tomatoes. She ate her dish over a bed of salad greens topped with goat cheese. Yum!
Mexican Cauliflower Rice:
-1 cup frozen cauliflower rice
-1/2 can black beans
-grilled chicken
-1/2 tsp cumin
-1/2 tsp garlic
-1/2 tsp salt
-1/8 tsp cayenne
-sprinkle of pepper
–Saute everything in a skillet until thoroughly warmed.
–Serve over a bed of greens and top with fresh diced Roma tomatoes and salsa.
Smothered Brats:
-1-2 brats, diced
-1 medium onion, diced
-2 tbsp red wine
-6 oz carton cherry tomatoes
-1/2 tsp salt
-1/8 tsp pepper
-3 cups salad greens
-1-2 tbsp goat cheese
–Saute the brats and onions on med-high heat until browned. Add the red wine. Add the cherry tomatoes and simmer on low for 5-7 minutes.
–Serve over a bed of greens with the goat cheese!
