😷 If you’re not feeling great, eat chicken & miso ramen 🍜
Ramen broth recipe:
1 tsp oil
1 tsp miso paste
1/2 tsp turmeric paste
1 tsp black peppercorns
500ml chicken stock (or 500ml water mixed with low sodium stock cubes)
4 slices of ginger
2 garlic cloves
Whites of 2-3 spring onions
A handful of dried mushrooms
1 sheet of kombu/kelp
Optional: 1/4 tsp dashi stock
Gentle simmer on low heat for ~20-30 minutes.
Ramen sauce base:
1 tsp dark soy
1 tsp light soy
1 tsp rice wine vinegar
1 tsp sugar
1/2 tsp chilli oil
1/2 tsp sesame oil
Build ramen:
Ramen noodles (I made fresh ones earlier – but can use whatever packaged noodles)
Pickled carrots
Greens of spring onion
2 soft boiled eggs, optionally marinaded in a soy and sugar mix
