[Butternut Squash Black Bean Enchiladas with Green Sauce]

For the Enchiladas:
– 7 corn tortillas
– 3 cups cubed butternut squash
– 1/2 bell pepper
– 1/2 medium onion
– 1 15 oz can black beans (
– 1/2 Tbsp coconut oil (
– 1/2 Tbsp taco seasoning (
– 1/2 tsp sea salt (

For the Enchilada Sauce:
– 1/2 Tbsp coconut oil (
– 1/2 cup minced onion
– 2 garlic clove, minced
– 3 Tbsp flour (
– 1.5 cups vegetable stock/ broth (
– 2 cans (8 oz or approx. 1 cup) diced green chilies (
– 1 diced banana pepper (or jalapeno)*
– 1/4 tsp cumin (
– 1/4 tsp dried oregano (
– salt to taste (

*rinse canned green chilies before adding to recipe to take away some of the saltiness and then add salt to the sauce to taste

**use gluten free flour if needed (

Enchiladas Loosely Adapted from:

– Mel’s Kitchen Cafe:

[Spiced Pumpkin Apple & Cauliflower Soup]

– 1/2 medium onion
– 1 stick celery, diced
– 1 medium carrot, diced
– 1/2 head of cauliflower
– 1/8 tsp dried ground ginger (
– 1.5 cups vegetable stock (
– 1 cup water
– 1 15 oz can pumpkin puree (
– 1 medium tart apple, cubed (Macintosh, granny smith etc.)
– 3 cloves garlic
– 1/8 tsp dried thyme (
– 1/8 tsp cumin (
– salt and pepper to taste

Recipe Adapted From:
– Salt and Lavender:

[Avocado Alfredo Spaghetti Squash]

Sauce:
– 1 avocado
– 1/4 cup nutritional yeast (
– 1 tsp onion powder (
– 2 cloves garlic
– 2 tsp mild yellow miso
– 1/2 tsp salt (
– milk or water to blend

*All of these measurements are variable and can be adjusted to personal preference

Serve over spaghetti squash or noodles. I served mine with sautéed mushrooms, onions and fresh tomato.
