Creamy chicken mushroom soup ❤️ Perfect for cozy winter nights!
Ingredients:
3 cup of sliced mushrooms
1 cup of diced chicken breast
1 tbsp butter
1½ tbsp olive oil
4 garlic cloves, sliced
2 tbsp pepper powder (adjust to taste)
6-7 cashews
Salt to taste
Recipe:
1. Heat butter in a pan and add 2 cups of sliced mushrooms. Saute until it gets brown and cooked. Keep aside to cool.
2. Add the olive oil to the same pan and add the diced chicken. Saute it until cooked.
3. Add the sliced garlic, mushrooms, salt and 1 tbsp of pepper. Saute until it’s slightly fried.
4. Add the sautéed mushrooms, cashews with 1¼ cup of water to a blender and blend until smooth and creamy (adjust the water ratio as you prefer).
5. Add the mixture to the pan and let it simmer for 1-2 minutes. Add 1 tbsp pepper powder and give a mix. Garnish with chopped herbs and sautéed mushrooms. Serve hot and enjoyy!
