Detox Quinoa Salad with Apple Cider Vinaigrette

Ingredients:
– 1 cup dried quinoa
– 1 cup pomegranate seeds
– 6 dates, diced
– 1 green apple, diced
– Juice of 1 lemon
– 2 tbsp olive oil
– 1 cup spinach, chiffonade

Maple Syrup Detox Dressing Ingredients:
– 1 tbsp maple syrup
– 1 tbsp Dijon mustard
– 1 pinch cayenne pepper
– Juice of 1 lemon
– 1 tbsp apple cider vinegar
– 1 clove garlic, minced
– ½ cup extra-virgin olive oil

Instructions:
Step 1: Cook 1 cup of quinoa according to package instructions. Once cooked, let it cool completely.

Step 2: In a large mixing bowl, combine the cooled quinoa, 1 cup of pomegranate seeds, 6 diced dates, 1 diced green apple, and 1 cup of chiffonade spinach.

Step 3: In a separate bowl, whisk together 1 tablespoon maple syrup, 1 tablespoon Dijon mustard, a pinch of cayenne pepper, the juice of 1 lemon, 1 tablespoon apple cider vinegar, and 1 minced clove of garlic.
